Yum these are perfect for lunch meal prep. Listed below is the ingredients per serve but I often make five in one go. Depending on how many you want me to just multiply the ingredients.

I love a bit of spice but if you don’t as much leave out the sriracha. Top the rice bake with fresh spring onions and a little more natural yogurt and this is delicious!

  • Total Time: 1 hour 5 minutes

Ingredients

Scale
  • 100 grams chicken breast cubed
  • 1/4 Cup Rice (I like to use basmati)
  • 1/2 Cup Chicken Stock
  • 1/2 Teaspoon cajun seasoning
  • 2 Tablespoons natural yogurt
  • 1/3 Cup red capsicum diced
  • Marinade for chicken: 1tbs natural yogurt, 1tsp sriracha, Sprinkle of cajun seasoning, garlic powder, dried oregano and parsley
  • Oven safe individual glass lunch containers
  • Optional toppings: natural yogurt and spring onion

Instructions

  1. Preheat over to 180degrees fan forced
  2. In a bowl mix together all marinade ingredients and chicken. Coat all the chicken in the marinade and place in fridge for at least 15mins – longer is better if you have the time.
  3. In each container add the rice, red capsicum, yogurt, stock and cajun seasoning and stir.
  4. Add the chicken and stir
  5. Place in oven and cook for 45mins until the chicken is cooked and rice is tender.
  6. Allow to cool before storing in the fridge.
  7. Optional toppings – natural yogurt and spring onion.
  8. Enjoy!

Easy, Healthy, Delicious! What else would you want from a savoury slice. The bacon really levels up the zucchini slice! I often eat this one for breakfast on the go – It has eggs and bacon in it so why not? This is a regular addition to the kids lunch boxes!

  • Total Time: 50 minutes

Ingredients

  • 200g Bacon finely chopped
  • 1 Onion finely diced
  • 5 Eggs
  • 2/3 Self Raising Flour
  • 1 teaspoon baking powder
  • 2 Zucchini coarsely grated
  • 1 cup Cheese grated
  • Little olive oil for cooking

Instructions

  1. Preheat over to 180degrees fan forced
  2. Line a 20 x 30cm slice pan with baking paper
  3. Heat a little olive oil in a pan and cook the onion and bacon until bacon is crisp and onion is soft – set aside to cool slightly
  4. Add eggs to a bowl and whisk until combined.
  5. Add flour and baking power to the eggs and mix until smooth
  6. Add zucchini, cheese and bacon mixture and stir again until all combined
  7. Poor mixture into your lined tin and cook in oven for 30 mins until the top is a light brown golden colour.
  8. Allow to cool slightly before cutting.

Homemade Anzac biscuits have got to be one of my favourite biscuits. I prefer them slightly chewy. I don’t know about you but I feel like they are a forgotten about biscuit until the week of Anzac Day each year. But these are a classic and perfect every time. I love this recipe as it so easy and doesn’t require the stove for the wet ingredients making it even easier!

  • Total Time: 30 minutes
  • Yield: 25 1x

Ingredients

Scale
  • 1.5 Cups  rolled oats
  • 1.5 Cups Plain Flour
  • 3/4 Cup Brown Sugar
  • 1 Cup Desiccated Coconut
  • 190grams Butter
  • 1/4 cup Golden Syrup
  • 1 teaspoon Bicarbonate of Soda

Instructions

  1. Preheat over to 180degrees fan forced
  2. Line two large baking trays
  3. Add oats, flour, sugar and coconut to a bowl and stir to combine.
  4. In a microwave safe bowl add butter, golden syrup and 3 tablespoons water and heat for 2-3 mins until butter is melted.
  5. Carefully remove bowl and add in bicarb soda and whisk to combine – mixture will start to foam up.
  6. Pour the wet mix into the dry mixture and stir until well combined.
  7. Roll even balls of dough, place on lined baking tray and flatten.
  8. Bake for 8-10 mins for soft and chewy or 12-15 for crunchier biscuits.
  9. Allow to cook on tray for a couple minutes before cooling on wire rack.

Receipt make approximately 25 cookies. Store in an airtight container for a 3-5 days

Apple and Cinnamon – What a classic combo. We love these muffins in our household. Sometimes when I am in a rush I even have one or two of these for breakfast or a perfect on the go snack.

  • 2.5 Cups of Applesauce
  • 1/4 Cup Milk
  • 1.5 Tablespoon Vanilla Extract
  • 1.5 Tablespoon Apple Cider Vinegar (or white vinegar)
  • 2 Cups Plain Flour
  • 1/2 Cup Caster Sugar
  • 1 Teaspoon salt
  • 1 Teaspoon baking soda
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Cinnamon

Instructions

  1. Preheat over to 180degrees fan forced
  2. Line a Muffin tray with 12 patty pans or muffin liners
  3. Add applesauce, milk, vanilla and vinegar into a bowl and whisk to combine
  4. In another bowl add all the dry ingredients and stir to combine
  5. Add the dry mix into the wet mix and stir until just combined – don’t over mix
  6. Divide mixture in the lined muffin tray – Fill 2/3 of the way
  7. Bake for 18-20Mins until the muffins have risen
  8. Allow muffins to cool

These delicious cookies only have a couple ingredients and are amazing. If you like peanut butter cups here is a yummy alternative to those. These cookies a simple and quick to make. They are a family favourite for us.

Ingredients

Scale
  • 2 Cups Smooth Peanut Butter
  • 1.5 cups caster sugar
  • 2 eggs
  • 2 Teaspoons Vanilla Extract
  • 1 Cup Dark Chocolate
  • Sea salt Flakes

Instructions

  1. Preheat over to 180degrees fan forced
  2. Place peanut butter, sugar, egg and vanilla in a bowl and mix well
  3. Evenly divide cookie dough by 20 and roll into balls
  4. Flatten the balls and allow room between cookies
  5. Cook in oven for 12-15mins – Cookies will be soft but once cool they will firm up
  6. Allow cookies to cool before dipping in chocolate
  7. Melt dark chocolate and dip the top half of the cookie in the chocolate and sprinkle a little sea salt on top.
