Tuscan Chicken and Rice Bake
Here is another individual lunch meal idea for you I have been loving these chicken and rice bowls and they are so versatile. This one is delicious!
All ingredients are listed per bowl. You will need to multiply them by the amount of meat you are making.
- Total Time: 1 hour 5 minutes

Ingredients

- 100grams Chicken Breast cubed
- 1/3 cup rice – I use basmati rice
- 1/2 Cup Chicken Stock
- 1/4 Cup Greek Yogurt
- 2 Teaspoon Tuscan Seasoning – I use MasterFoods
- 1/4 Cup Sundried Tomatoes
- 1/4 Cup Mushrooms sliced
- 1/4 Cup Spinach chopped
Instructions
- Preheat over to 180degrees fan forced
- In a bowl add chicken, yogurt and 1/2 of the tuscan seasoning and mix to coat chicken
- Add rice and stock to an individual heatproof dish and stir
- Add sundried tomatoes, spinach, mushrooms and the other half of the tuscan seasoning and stir
- Place chicken on top and mix through
- Cook in oven for 45 mins until rice is tender.

Started watching and really enjoying your ideas
I made a family sized version of this last night. I 6x the individual recipe in a lasagne dish and it was a hit with everyone! There was just enough liquid for the 2cups of rice, it wasn’t dry at all, but there was no extra liquid left in the dish. I couldn’t have fit any more in the dish though. I used a whole jar of Tuscan seasoning. Thanks for the recipe! I’m so excited to have found a meal our whole family will eat happily, including our 3 teenagers!
I have made this a couple of times now and OMG it’s so delicious! Even the 3yr old loves it!
