Easy Pizza Pockets with Hidden Veg
These little pizza pockets are easy to make, freeze well and are are a yummy lunch box snack. These are perfect for using up any vegetables that need to be used up. You can hide all different veg in these by finely grating them and adding it to the pizza pocket. Store them in the fridge for up to 5 days. You can put them in the air fryer for a couple mins to crisp up again.

- 6 squares puff pastry
- Pizza sauce or tomato paste
- 2 cups grated cheese
- 400grams Deli meat of choice – we love Ham and salami Finley cut up
- 1 cup Finley grated/cut up vegetable – I add finely grated carrot and Finley cut baby spinach
- 1 egg and 1tablespoon milk whisked together for egg wash
Instructions
- Preheat over to 180degrees celcius
- Line a large baking tray with baking paper
- Place 6 sheets of puff pastry out on bench to thaw
- Cut puff pastry square into 4 smaller squares
- Place a small dollop of pizza sauce or tomato paste into the centre of each small square
- Evenly top with cheese, deli meat and veg
- Fold all corners into the centre closing the pizza pocket
- Place on lined baking tray with seam side down
- Brush with egg wash and sprinkle of sesame seeds (optional)
- Bake in over for 20-25mins until golden.
