Ingredients

- 600 grams tortellini
- Olive oil
- 85grams butter
- 1.5 cups of heavy cream
- 3/4 cup lemon juice (see comment)
- 2 tablespoon lemon rind
- 1.5 cups parmesan cheese
- 2 shallots
- 4 cups spinach
- 4 garlic cloves
- 1 teaspoon cracked pepper
- ½ teaspoon red chilli flakes
- Reserved pasta water
- Fresh basil
Instructions
- Cook pasta
- Heat olive oil and butter in a heavy bottom skillet.
- Add shallot, garlic and red chilli flakes and soften for 1-2 mins
- Add heavy cream and allow to thicken for a minute or two.
- Stir through lemon juice, lemon rind and parmesan.
- Add pasta, spinach, salt and pepper and stir to coat all the pasta in delicious sauce.
- Serve hot with a little more parmesan and fresh basil.
