Creamy Spinach and Lemon Tortellini
This pasta is zesty, creamy, hearty and absolutely delicious. You can make it in under 20mins which is the biggest mum win on busy nights. The family will love it and I am sure that it will become a staple recipe on your meal plan.
You can use vegetarian tortellini to keep it a meat free option!

Ingredients

- 600 grams tortellini
- Olive oil
- 85grams butter
- 1.5 cups of heavy cream
- 3/4 cup lemon juice (see comment)
- 2 tablespoon lemon rind
- 1.5 cups parmesan cheese
- 2 shallots
- 4 cups spinach
- 4 garlic cloves
- 1 teaspoon cracked pepper
- ½ teaspoon red chilli flakes
- Reserved pasta water
- Fresh basil
Instructions
- Cook pasta
- Heat olive oil and butter in a heavy bottom skillet.
- Add shallot, garlic and red chilli flakes and soften for 1-2 mins
- Add heavy cream and allow to thicken for a minute or two.
- Stir through lemon juice, lemon rind and parmesan.
- Add pasta, spinach, salt and pepper and stir to coat all the pasta in delicious sauce.
- Serve hot with a little more parmesan and fresh basil.
