Marry Me Chicken Meatballs and Pappardelle

This is a family favourite. It is creamy, full of flavour, warm and filling. It is great for leftovers the next day.

Ingredients

Meatball ingredients

500grams chicken mince

1/3 Cup bread crumbs (I use panko)

1/4 Cup Parmesan Cheese

1 Tbs Italian Herb mix

1 Tbs Parsley

2 Tbs Minced garlic

1 Egg

1 Tbs Butter to cook in

Marry Me Sauce

1 Tbs reserved oil from sun-dried tomato jar

2 Tbs Minced garlic

1 Tbs Tomato paste

1 Cup Chicken stock

1 Cup Cooking cream

1/2 Cup Parmesan

1 Cup sun-dried tomatoes – drained

1 Tbs Italian herb mix

Little extra parmesan cheese and fresh basil to serve

Instructions

Cook Pasta as per direction on packet

Add all meatball ingredients in a large bowl and mix well.

Form into meatballs – roughly makes 20 meatballs

Heat butter in large pan and brown meatballs on all sides. Remove from pan and set aside.

Turn heat to low-med and heat a little more butter and the reserved oil from sun-dried tomatoes

Add minced garlic and tomato paste and stir.

Add chicken stock and stir to deglaze the pan – Simmer for 1-2 mins

Add cooking cream and parmesan cheese and stir – Simmer for 2-3 mins

Add the sun-dried tomatoes, Italian herbs and pasta and stir to coat pasta

Add meatballs back in and cook for 3-4 mins until meatballs are cooked through.

Serve warm with a little extra parmesan and fresh basil and enjoy!

I am still loving my chicken and rice bakes in individual single serve containers. They are so easy and great for using what any curry pastes, sauces and spices that need to be used up.

Ingredients

100 grams Chicken breast cubed

1 Tbs Thai red curry paste (I love the volcom brand)

1/2 Tbs Greek Yogurt

1/4 cup Basmati Rice (washed)

1/2 Cup Chicken Stock

1/4 Cup Red Capsicum

1/4 cup Bamboo shoots (optional)

2 Tbs Coconut cream

Instructions

Preheat Over to 180Degrees celsius.

Add Chicken, curry paste and greek yogurt to a bowl and stir to coat chicken

Add rice and stock to your individual container and stir

Add coconut cream, capsicum and bamboo and stir

Top with chicken and bake in oven for 40-45 mins until chicken is cooked and rice is tender.

Notes

This recipe is for single serve dishes. Multiply by the amount of serves you need. I am using the Ikea 1l rectangle for this recipe.

These are perfect for meal prep but If you are someone like me that doesn’t like the texure of overnight oats this will be perfect for you. I prep them in advance and heat them up each day, top with yogurt and berries and enjoy a warm filling breakfast.

Ingredients

1/2 Cup quick oats

1 Tbs Chia Seeds

1 Tbs Maple Syrup

2 Tbs Vanilla yogurt

1 Cup Almond Milk

Instructions

Add all ingredients to your single serve glass (microwave safe) containers

Give all ingredients a stir

Cover with lid and place in fridge.

Each morning heat in microwave for 1.5-2 mins and top with a little yogurt and berries

These are single serve amounts. Multiply by the amount of serves you need. I have prepped mine in the Decor 600ml rectangle glass containers.

1/4 Cup Chia Seeds

2 Tablespoons Coconut

1 1/4 Cup Light coconut cream

1 Teaspoon Vanilla Extract

2 Tablespoons Maple Syrup

Favourite toppings – I enjoy fresh strawberries, frozen raspberries and/or fresh mango

Instructions

Add all ingredients into individual glass containers and stir

Leave on Bench for 10-15 mins and stir again.

Cover with lid and place in fridge overnight

Top with you favourite ingredients each day.

Notes

These are single serve. I meal prep 5 for my work week so I multiply ingredients by 5 when writing my shopping list.

The words creamy and pasta always sound so appealing to me. So this creamy cajun chicken pasta is one of my faves. It is quick and easy to prepare and one I feel many will love

Ingredients

500 Grams Chicken Breast Diced

2 Tablespoon Cajun Seasoning

1 Large brown onion diced

2 Medium red capsicum diced

2 Tablespoons minced garlic

1 Cup Chicken Stock

1 Cup Light Cooking Cream

100Grams cream cheese

1/4 Cup grated parmesan

500 Grams pasta of choice

Optional 1 tablespoon chilli flakes

Serve with fresh basil leaves

Instructions

Cook you pasta until al dente in a pot of slightly salted boiling water

Heat a drizzle of olive oil in a pot and add the onion, chicken, garlic, capsicum, cajun seasoning and chilli flakes if you like spice.

Cook until chicken is browned on each side (around 5-6 mins) and season with salt and pepper

Remove chicken into a bowl and add stock, cream and cream cheese to th same pot you cooked the chicken in.

Whisk until smooth and bring to a simmer. Keep at a gentle simmer for 5 mins until thickened slightly.

Add the chicken mix and cooked pasta and gently stir to coat everything in the delicious creamy sauce.

Serve between the bowls and sprinkle over parmesan and fresh basil leaves.

This hearty, warm, wholesome recipe with sure to be a family favourite. There is lots of hidden veg so if you have little ones that aren’t interested in eating their veggies this one is for you!

Ingredients

2 Large Brown Onion Diced

2 Carrots Grated

1 Zucchini Grated

2 Tablespoons Minced Garlic

2 Tablespoon Italian Herbs

2 Tablespoons Tomato Paste

1/2 Cup Balsamic Vinegar

800 Grams Beef Mince

2 Litres Beef Stock

2 400g Tins of Crushed Tomatoes

1 Pack of Lasagna Sheets (either dried or fresh)

Optional extra to serve: creamy cheese and ricotta mix see notes below

Instructions

Add onion, carrot, zucchini and garlic to a heavy bottom pot and soften for a few minutes.

Add beef, Italian herbs, pinch or salt and pepper and stir until fragrant

Add tomato paste, balsamic vinegar, crushed tomatoes and stir.

Add beef stock and broken up lasagna sheets and stir making Sure to push down the pasta.

Reduce to a simmer and simmer for 20-25 mins until pasta is cooked.

Divide between bowls and enjoy. I top mine with dollops of creamy cheese and ricotta mix and fresh parsley.

Notes

As a substitute to a creamy white sauce that is generally served in the layers of lasagna, I mix 1.5 cups of smooth ricotta with 1 cup grated cheese. Stir through a little salt and pepper and Italian herbs. Add dollops onto your lasagna soup and sprinkle over some fresh parsley.
