Coconut and Vanilla Chia Puddings
Yum!! I have these for breakfast but they are so good you could have them for dessert and snacks!

Ingredients
Scale
1/4 Cup Chia Seeds
2 Tablespoons Coconut
1 1/4 Cup Light coconut cream
1 Teaspoon Vanilla Extract
2 Tablespoons Maple Syrup
Favourite toppings – I enjoy fresh strawberries, frozen raspberries and/or fresh mango
Instructions
Add all ingredients into individual glass containers and stir
Leave on Bench for 10-15 mins and stir again.
Cover with lid and place in fridge overnight
Top with you favourite ingredients each day.

These are single serve. I meal prep 5 for my work week so I multiply ingredients by 5 when writing my shopping list.

These are delicious! Best chia pudding I’ve ever made. Perfect level of sweetness. It’s a big serve so I split each serve into 2 portions. Added blueberries and pepitas for crunch. Yummy.
Great recipe, quantities make a great consistency and prefect sweetness. Like poster before me, amount is personally too big and split into two portions.
