Nando’s Chicken and Halloumi Rice
Do you need a super quick and easy lunch prep idea? Well this is it. These easy Nandos chicken and rice bake can’t get any simpler. You can use difference spice options from Nandos depending on your love or hate for chilli. I personally love the Nandos hot sauce. I make these on a Sunday and place in the fridge for my husband and I to grab for lunches. You can also freeze these to eat at another time. Just allow to thaw in the fridge overnight and heat thoroughly the next day.

Ingredients
- 600grams Chicken breast diced
- 200grams basmati rice
- 1 large red capsicum diced
- 125grams low fat yogurt
- 400mls chicken stock
- 200 grams cherry tomatoes
- Packet of halloumi sliced
- 1/2 bottle of Nando’d Marinade
- 1/2 bottle of Nando’s sauce or rest of marinade
Instructions

Preheat oven to 180degrees

Using 4 oven safe glass containers divide ingredients between 4 containers

Stir through and cook in oven for 35mins

Just before the chicken has finished cooking air fry some halloumi slices for a couple of mins and top the chicken with the halloumi.

Allow chicken and rice bake to cool, cover with a lid and place in fridge.
