Moroccan Chicken
Cous Cous Bowl
This fresh, healthy delicious morroccan chicken bowl will be a family favourite. It is easy, customisable and super quick to make on those nights you don’t have time. It is also a great meal for leftovers. Don’t be fooled by the amount of ingrediants, it is likely you have most of these in your panty or fridge.
This recipe certainly is a go to for me when I need a healthy meal on the table within 30 mins.
INGREDIENTS
Moroccan spice mix:
1.5 tablespoon ground cinnamon
1 teaspoon smoked paprika
½ teaspoon ground ginger
½ teaspoon nutmeg
½ teaspoon cayenne pepper (leave out if you don’t enjoy spice)
½ teaspoon sea salt
Bowl Ingredients
1kg Chicken breast cut into cubes
½ cup tomato paste
1 tablespoon Olive oil (plus little extra to cook with)
1 cup chicken stock
1.5 cups dry couscous
3 cups chicken stock
1 cucumber diced
1.5 cups cherry tomatoes but in half
1 red onion thinly sliced
½ cup natural or Greek yogurt
¼ cup parsley chopped
Method

Bring 3 cups of chicken stock to the boil in a pot, once boiling add dry couscous and give a quick stir
2. Place lid on and take pot off the heat. Allow couscous to steam while you cook the chicken.
3. Mix spices together to create the Moroccan spice mix.
4. Add spice mix, olive oil and chicken to a bowl and mix well until all chicken is coated.
5. Heat a drizzle of oil in a large skillet and add chicken
6. Cook chicken until sealed and starting to brown.
7. Add chicken stock and tomato paste to the chicken and stir until sauce starts to thicken and chicken is cooked through. Around 5-8mins
8. Using a fork fluff up the couscous and dived between bowls
9. Divide chicken and place next to couscous and make sauce you add the sauce to each bowl.
10. Add cucumber, tomatoes, red onion, yogurt and a sprinkle of parsley to finish.
