Baked Pancakes
Yum! These single serve baked pancakes are so good! I add frozen raspberries and chocolate chips when baking them. I drizzle a little maple syrup on them once I’ve warmed them up – Perfect prep ahead and enjoy breakfast!
INGREDIENTS
Single Serve
- 1 Egg
- 50grams vanilla yogurt – use yopro high protein vanilla yogurt. I think it is the best!
- 70mls almond milk
- 60grams plain flour
- 1 tablespoon brown sugar
- 1/2 teaspoon baking powder
- 2 tablespoons chocolate chips
- 2 tablespoons frozen raspberries
INSTRUCTIONS
- Preheat over to 180degrees fan forced
- Add egg, yogurt, milk, flour, sugar and baking powder to your single serve container (or large bowl if you are multiplying the recipe) and whisk until smooth
- Divide batter into containers – If making multiple meal prep
- Sprinkle over chocolate chips and raspberries
- Bake in oven for 20-25mins until a skewer comes out clean in the centre.
- ENJOY!
Note: The ingredients listed is for a single serve – Multiply by how many you would like to prepare ahead of time.
I reheat in the microwave for 90seconds and drizzle over a little maple syrup – Delicious!!
I baked mine in the IKEAS 365 glass range 600ml square container.
Once cooled down I cover with a lid and store in fridge. Lasts 3-5days in the fridge.
Made this last week and I wanted to let you know it was lovely. Tasted more like a dessert for breakfast! Which I loved. 🥰
I loved this so easy and filling for breakfast. I substituted 1tb of flour for vanilla protein powder to make extra filling. Keeps me going until lunch – thanks
