Slow Cooker Chicken Tacos

Who doesn’t love a delicious dinner that is under 10mins prep! It takes less than 5 mins to put everything in the slow cooker and leave it do its thing for 4 hours! Our family loves building our tacos with fresh fillings such as lettuce, coriander, cucumber, pickle onions and a creamy yogurt dressing.

Ingredients

Scale

Chicken

  • 6 Chicken Thighs
  • 4 Tablespoons tomato puree
  • 1 tablespoon sweet smoked paprika
  • 1 tablespoon cajun seasoning
  • 1 tablespoon ground cumin
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon Italian herbs
  • 2 tablespoons sriracha (see note below)
  • 2 tablespoon honey
  • 2 tablespoon lime juice
  • Pinch of salt and pepper

 

Greek Yogurt Dressing

  • 4 Tablespoons light greek yogurt
  • 2 teaspoons garlic power
  • 2 teaspoons onion powder
  • 2 tablespoons lemon juice

Pickled Red Onion

  • 2 Large Red Onions
  • 1.5cups Vinegar of choice (I used apple cider but you can use white or red wine vinegar)
  • 1.5 cups of water
  • 2.5 teaspoons salt
  • 5 tablespoons white sugar
  • I added peppercorns and coriander seeds but this is optional

Fillings

  • Lettuce
  • Cucumber
  • Cheese
  • Coriander
  • avocado

Instructions

Chicken

  1. Add all ingredients into the slow cooker
  2. Using tongs make sure all ingredients are combined and chicken is well coated
  3. Cook on high for 4 hours
  4. Use tongs to shred the meat

Yogurt Dressing

  1. Add all ingredients and stir to combine

Pickled Red Onion

  1. Slice red onions as thin as you can and add to a jar
  2. All all other ingredients to a pot, stir and bring to a simmer.
  3. Simmer for two mins, turn off heat and allow to cool
  4. Once cool add the liquid to the jar with red onion and place in fridge for at least one hour

Assemble your taco

  1. Simply add all your favourite ingredients to your tortilla and ENJOY!!!

NOTE: If you don’t like spice you can substitute the sriracha for 2 extra tablespoons pf tomato puree
