Fajita Chicken and Rice Bowls

Single serve chicken and rice bowls have been my go to for lunches lately. Melbourne winter is so cold and having one of these for lunch is so warming and comforting. I love Mexican meals and this one is a hit! It is a must try

Ingredients

Scale

1 Red Capsicum diced

1 Red onion Diced

500 grams Chicken breast diced

5 Tablespoons natural yogurt

1 Fajita spice mix – I’m using the Mingle brand

1 1/4 Cup Basmati Rice

2.5 Cups chicken stock

1 400gram can cherry tomatoes

Little extra natural yogurt, avocado and spring onion to serve

Instructions

Add diced capsicum, red onion, chicken, natural yogurt and fajita spice mix to a bowl and mix to coat

Divide all ingredients between 5 single serve glass dishes (see not below)

Mix all ingredients

Cook in oven at 180Degrees for 35-40 mins

Each day top with a little natural yogurt, avocado and spring onion

Notes

I use the Ikea 365 glass range. for this recipe I am using the 1L rectangle glass container.
