Chocolate Banana Cake
Do not throw those bananas out! turn them into the most delicious moist banana and chocolate cake. Most of these ingredients would be found in your pantry and so whenever I have bananas that need using up I turn to this recipe. you can leave out the dark chocolate but please try it because it is yum!

Ingredients

- 1/2 Cup Butter softened (125grams)
- 2 Cups mashed banana
- 2 Eggs
- 2 Teaspoons vanilla extract
- 1 Teaspoon Baking Powder
- 1 Teaspoon Baking Soda
- 1 Teaspoon Cinnamon
- 1 Cup Brown Sugar
- 1 3/4 Cups Self Raising Flour
- 1 Tablespoon Golden Syrup
- 1 Cup Dark Chocolate Chips or Melts
Instructions
- Preheat over to 180degrees fan forced and line a 24x24cms cake tin
- Place butter, sugar and vanilla in a bowl and beat on high with electric or handheld beaters for 5-6 mins until creamy and pale
- Scrape down sides of bowl and add eggs and beat at medium speed combined well
- Add banana, golden syrup and all dry ingredients and stir to combine
- Fold in chocolate and spoon into the lined tin
- Bake for 45-50mins or until a skewer comes out clean
- Allow to cool for 10 mins before slicing.

Simple yet tasty and moist. I used 6 small frozen bananas which gave me exactly the quantity required. Next time I will reduce oven temp a little as the outside browned a little too fast before the centre was cooked
