Chicken Meatballs in Herb and Tomato Orzo

This one is another one-pot wonder. The meatballs are soft and full of flavour. The orzo has a creamy texture and is the perfect base for chicken meatballs. This is a must-try! one the whole family will love

Ingredients

Meatballs

  • 1kg Chicken mince
  • 1 Cup breadcrumbs
  • 1 Brown onion diced
  • 1/2 teaspoon chilli flakes (optional)
  • 1/2 Cup parmesan cheese
  • 1/2 Cup sundried tomatoes chopped
  • 1 tablespoon Italian seasoning
  • 1 tablespoon dried basil
  • 1 tablespoon minced garlic

Orzo Ingredients

  • 1 diced onion
  • 1 tablespoon butter
  • 1 tablespoon minced garlic (for orzo )
  • 1 tablespoon Italian seasoning
  • 1.5 cups orzo
  • 1/2 cup tomato paste
  • 3 Cups Chicken Stock

Optional Toppings

  • Fresh basil
  • Grated parmesan

Instructions

  1. Preheat oven to 180degrees fan-forced
  2. Add mince, one onion, garlic, breadcrumbs, cheese, herbs and sundried tomatoes into a large bowl and mix well
  3. Using your hands form mince mix into meatballs
  4. Heat a little oil in a large heavy bottom skillet and cook half the meatballs for 2 minutes on each side – don’t worry if they aren’t cooked through completely, they will finish in the oven later
  5. Remove and cook the other half of the meatballs.
  6. Place all cooked meatballs on a plate and set aside
  7. Using the same pan add butter, garlic and onion and soften for 1-2 mins
  8. Add herbs and orzo and stir to allow the orzo to soak up all the flavour
  9. Add tomato paste and half the stock and stir to deglaze the pan
  10. Add the rest of the stock and stir
  11. Gently place the meatballs into the orzo and stock mix, cover with a lid and place in oven
  12. Cook in the oven for 25-30 mins until the orzo is cooked.
  13. Top with fresh basil and a sprinkle of parmesan and enjoy
