Beef Koftas with Sweet Potato and Slaw
YUM! This is sure to become a family favourite. This is a go to family meal when I am needing a quick, easy, fresh dinner where the cooking portion isn’t to hands on. You can prepare the beef ahead of time on the skewers and place in the fridge so you can just chuck them in the air fryer for an easy dinner. I love the beef and sweet potatoes with a fresh zingy homemade slaw but you can use store bought, make a green salad, steamed veggies and whatever else you like. You can also cook these on the BBQ if you prefer. Delicious

Ingredients
Beef Koftas:
- 800 grams beef
- 2 teaspoons Parsley (dried or fresh finely chopped)
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon cumin
- 2 teaspoons minced garlic
- ½ teaspoon sweet smoked paprika
- 1 teaspoon thyme (dried or fresh finely chopped)
- 2 tablespoons olive oil
- Pinch of salt and pepper
- Wooden or metal skewers
Baked Sweet Potato with herbed sour cream
- 4 small sweet potato (see note below)
- Olive oil
- Salt
- Pepper
- ½ a cup of sour cream
- 2 tablespoons chopped chives
- 1 teaspoon garlic powder
Slaw
- 2 cups shredded Red cabbage (as thin as possible)
- ½ red onion thinly sliced (thin as possible)
- 2 grated carrots
- ½ cup Kewpie mayonnaise
- ¼ Cup Sriracha (optional but add if you love spice)
Instructions

If you are using wooden skewers soak in water for 20-30 mins

Wash, scrub and dry your sweet potato. Drizzle with olive oil and add a pinch of salt and pepper. Make sure the potato is coated all over.

Place in air fryer and bake on 200degrees for 40mins.

Meanwhile start to make your koftas.

In a large bowl add all of the beef kofta ingredients and using your hands combine well. Cover and place in fridge for 15-20mins.

With 10 mins to go on the potatoes grab the beef from the fridge and divide into 12 equal portions. Evenly and tightly mould it around a skewer.

Once the potatoes have finished cooking wrap them in alfoil to keep warm

Place beef koftas in the air fryer and cook on 200 degrees for 10 mins.

To make the herby sour cream, add all ingredients to a small bowl and stir to combine. Set aside until the koftas are done.

Once cooked start to assemble dinner on your plate

Slice open a potato and top with delicious herby sour cream, place fresh zingy slaw on your plate and finish off with the juicy, flavoursome koftas.
