Zucchini and Feta Fritters
These delicious litter fritters are sure to please!

Ingredients

- 2 Large Zucchini grated
- 250grams danish feta
- 3 eggs
- 1 Cup Plain Flour
- 2 Teaspoons baking powder
- 1/4 cup parsley finley chopped
- Pinch of salt and pepper
- Olive oil for frying
Instructions
- Remove excess water from the zucchini by squeezing through a muslin cloths or by patting dry with paper towel
- Add zucchini, eggs, flour, baking powder, parsley, salt and pepper and mix until well combined.
- Crumble in feta and mix until just combined
- Heat a drizzle of oil in a large pan
- Add spoonfuls as big or as small as you want your fritters and press down to flatten out
- Cook on each side for 2-3 mins or until the the sides a golden and little crispy on the edges.
- Allow to cool before storing or eat the fresh and warm.
