Zucchini and Feta Fritters

These delicious litter fritters are sure to please!

Ingredients

  • 2 Large Zucchini grated
  • 250grams danish feta
  • 3 eggs
  • 1 Cup Plain Flour
  • 2 Teaspoons baking powder
  • 1/4 cup parsley finley chopped
  • Pinch of salt and pepper
  • Olive oil for frying

Instructions

  1. Remove excess water from the zucchini by squeezing through a muslin cloths or by patting dry with paper towel
  2. Add zucchini, eggs, flour, baking powder, parsley, salt and pepper and mix until well combined.
  3. Crumble in feta and mix until just combined
  4. Heat a drizzle of oil in a large pan
  5. Add spoonfuls as big or as small as you want your fritters and press down to flatten out
  6. Cook on each side for 2-3 mins or until the the sides a golden and little crispy on the edges.
  7. Allow to cool before storing or eat the fresh and warm.
  8. Enjoy!
